Chi Chi Chicken Quesadillas

Ingredients:
1 boneless, skinless chicken breast, cooked, shredded
1 cup part-skim mozzarella or low-fat cheddar cheese, shredded
½ cup sliced mushrooms
¼ cup black olives, sliced
½ cup diced tomatoes
½ cup salsa
4 medium whole wheat tortillas
Instructions:
Preheat oven to 350 °F. Cook chicken as desired and then shred meat into a bowl. Combine chicken, cheese, mushrooms, olives and tomatoes. Spoon ¼ cup of mix onto tortillas. Fold, place on baking sheet. Bake at 350 °F for 7 minutes. Cut into 4 triangles and serve with salsa for dipping.
